Last night my good wife decided to try a new recipe taken from our recently purchased "Slimming World" cook book. When she said I was kind of apprehensive but to be honest it was the nicest thing I've ate in a very long time. I know a few of our friends have asked for the recipe - here it is, enjoy ;-)
Sticky 5-Spice Gammon (or in our case chicken)
2 tsp Chinese 5-spice powder
4 X 175g gammon steaks
Low calorie cooking spray
2 red chillies, deseeded and finely chopped
Finely grated zest and juice from 1 orange
1 level tbsp clear honey
100mls chicken stock
2 tbsp soy sauce
Sprinkle the 5-spice powder over the chicken. Spray a large, wide, non-stick frying pan with cooking spray and cook gammon over a high heat for 2-3 minutes or until the edges are tinged brown.
Add the red chillies, orange zest and juice, honey, stock and soy sauce and simmer rapidly for 4-5 minutes or until the sauce becomes sticky and the gammon is glazed and golden with almost burnt edges.
